I think when you boot the game up for the first time after you create system data there should be a screen that says:

Choose Unlock System

MISSION         STAGES

And you can reset it by deleting the DanceDanceRevolution X system data from the PS2 Memory Card. 

DDRMAX2 for it's Dancemania and then 4thMIX PLUS/5thMIX for it's song selection~

I think that the current difficulty of DanceDanceRevolution is O.K. Although, you may want to fine tune the foot ratings because I was playing Summertime (HOTTEST PARTY) on DIFFICULT (rated 4) and it seems like a 6.
